| Recipe of the Month...Salmon in Tomato Sauce |

Ingredients for the Salmon
1-2 6 oz Salmon Filet
1 teaspoon thyme
? -1 teaspoon salt
1 teaspoon crushed black pepper
1-2 teaspoons of Extra virgin olive oil
Ingredients for the Tomato Sauce
2-3 teaspoons of Extra virgin olive oil
2 tablespoon dried thyme
2 teaspoon turmeric
1 teaspoon pepper
1 teaspoon salt
1 yellow onion chopped
4-6 garlic cloves
1 large portabella mushroom
1 can of diced tomatoes
1-2 filets of baked salmon
Preparation for the Salmon
Preheat the oven to 325 degrees. Add thyme, salt
black pepper and 2 teaspoons of olive oil together
and spread mixture over the salmon. Bake at 325
degrees for 20 minutes until tender. Remove from
the oven and break into chunks.
Preparation for Sauce
While the Salmon is in the oven pour olive oil in a
sauce pan. Add thyme salt, pepper, turmeric, and
chopped onions. Saut¨Ļ for 5-6 minutes or until
onions become translucent. Add garlic, mushrooms
and diced tomatoes. Simmer for 10 minutes.
Remove from heat and add chunks of salmon. Serve
over a bed of vegetables or whole grains.
Serves 4.

Dr. Daemon has devoted this year to learning to love
yourself. We will have several articles and classes
that are devoted to helping you explore ways to love
yourself. During heart health month it is important to
take a moment and assess your emotional heart
health as well. Block out some quiet time in your
month to sit quietly with some paper and pen in hand.
Take a moment to write down activities that make your
heart sing. What makes you smile, laugh and feel like
you are soaring? Remember the sky is the limit.
Write at least 10 items down on your list. Take a
moment to think about how you can incorporate some
of them into your life this year. There may be some
things on the list you can incorporate into your weekly
ritual there others maybe items that you have to plan
into your month or year.
For example, if you love going to the aquarium, when
was the last time you went? Look at your schedule,
pick an afternoon or weekend to make a trip to your
local aquarium? Better yet, decide to go all out and
plan a trip to Atlanta to see the new Georgia
aquarium. ItĄ¯s suppose to be one of the nicest in the
country. The message is simple, to create excitement
in your life by loving yourself enough to do something
nice for you! As human beings we are all placed here
to love ourselves and others. IĄ¯m just asking to you to
actively love yourself by considering your heartĄ¯s
desires as you are planning your life. After all you are
worth it!
