Welcome to the Season of Giving

As we move into November thoughts turn towards the holiday meals we will get to eat. Thanksgiving is a holiday that conjures up thoughts of foods and family. It is a great time to take stock of how much you have to be thankful for in your life. If thoughts come up about disappointments and things you do not want in your life. Now is a great time to comtemplate changes that will create the life you want this time next year. Remember fall is the time to plant the seeds for next year's harvest.

Recipe for the Month - Cooking with Cranberries

In the spirit of Holiday cooking I wanted to give a couple is simple recipes that could be used during the holiday season. The first recipe is a simple cranberry sauce. Most people do not realize how simple cranberry sauce is to prepare to only takes 10 minutes. Your guests will think you are a gourmet for preparing it fresh. You can add nuts or pineapple chunks to add a wonderful twist. The second recipe is a wonderful dessert that is light and not too sweet. It is perfect after a heavy meal.

Simple Cranberry Relish

Combine in a large skillet
1 pound cranberries, picked over
2 cups turbinado sugar
½ cups water
½ cup orange juice
2 teaspoons grated orange zest

Cook at medium heat for 7 to 10 minutes. The cranberries will start to 'pop' and the liquid congeal. The longer you cook it the thicker it will be become. If this is the first time you are cooking cranberry sauce you want make sure the temperature is not to high because as the cranberries 'pop' they will splatter and make a mess on the stove top and your clothes.

Pear- Cranberry Pie

8 medium Anjou or Bartlett pears, peeled and slice
½ cup fresh cranberries
1 cup turbinado
1 heaping tablespoon flour
1 teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon salt
½ orange juice
2 teaspoon grated orange zest
*2 tablespoon butter or butter substitute
Double crust - this means you will use a crust in the pie pan and one over the pie ingredients.

Preheat oven to 425 degrees. In a bowl add pears, cranberries, sugar, flour, cinnamon, ginger, salt, orange juice and zest. Mix and pour into the pie crust. Dot with butter or butter substitute and cover with top crust. Make air vents. Bake for 15 minutes. Then lower the heat to 350 degrees and bake 30 minutes until pie browned. Enjoy!

* If you use a butter substitute do not use margarine. Margarine has trans fatty acids which have been associated with clogging of the arteries and heart disease.

Tip for the Month - How to deal with stress associated with the holidays.

Thanksgiving is the most travelled holiday of the year in the US . It is a time when families get together to celebrate. While we all love of families we don't always get along with them. The combination of travel and family "togetherness" can cause stress and frustration in many individuals. It is important to take time to realize if you are one of the individuals that fall into this category and build in personal time to keep you calm during the periods of stress. Think about what behaviors trigger stress in you and take responsibility for your stress. Then when you are feeling triggered find a way to remove yourself temporarily remove yourself from the situation. Find a quiet place to sit down, take 10 deep breaths and allow yourself to relax (Use your stress management techniques, that i have taught you). Remember that you what peace in this situation and do not let your ego override your intention for peace in the situation. Once you have calmed yourself you can go back to the situation look at it with new perspective.

I wish you love, peace and blessing. Have a healthy holiday.

Dr. Daemon Jones
